Moroccan Chickpea Salad


For the Salad:

1 can chickpeas, drained and rinsed
1 small green bell pepper, diced
1 cup cucumber, diced
1 large tomato, diced
1 medium red onion, diced
1/2 cup feta cheese
1/3 cup fresh parsley, minced
1 Tbsp fresh mint, minced

For the Dressing

2 Tbsp olive oil
3 Tbsp red wine vinegar
2 Tbsp fresh lemon juice (about 1/2 lemon)
1 Tbsp and 1 tsp dried ground cumin
salt and pepper to taste


Directions

Toss the chickpeas, diced vegetables, feta cheese and herbs in a large bowl. In a separate bowl, stir the dressing ingredients together. Pour the dressing over the salad and toss.
