Lunch Munch Cookies























Ingredients

1 cup brown sugar
1 cup white sugar
1 1/2 cups butter, softened
1/2 cup vegetable oil
2 eggs
1/4 teaspoon vanilla
1/2 teaspoon almond extract
1/4 cup milk
3 cups all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
1 cup rolled oats
1 cup crushed cornflakes cereal
2 cups chocolate chips or butterscotch chips


Directions

Preheat the oven to 350 degrees F.

In a medium bowl, cream the butter, brown sugar, white sugar until smooth. Mix in the oil, eggs, vanilla, almond extract and milk.

Combine the flour, baking soda and salt, stir into the sugar mixture.

Fold in the oats, cornflakes and chocolate chips.

Drop by rounded spoonfuls onto a cookie sheet.

Bake for 10 to 15 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.

I get 3-4 dozen cookies depending on how big I make them (and how much cookie dough was eaten by my nieces).
