German Rhubarb Cake




















INGREDIENTS

1/2 c. butter
1 1/2 c. brown sugar
2 eggs
1/2 tsp. salt
2 c. finely chopped rhubarb
2 1/2 c. flour
1 tsp. baking powder
1 c. buttermilk or soured milk
1 tsp. cinnamon
1/4 tsp. allspice (optional)
1/4 tsp. cloves (optional)
1 tsp. vanilla

Topping:

1/2 c. sugar
1 tsp. cinnamon
1/2 c. chopped nuts (optional)


DIRECTIONS

Preheat oven to 350 degrees F.

Beat butter and brown sugar. Add eggs, salt and vanilla.

In a separate bowl, mix flour, spices and baking powder.

Add flour and buttermilk to first ingredients. Mix well

Stir in the rhubarb and pour batter in a greased 9 x 13-inch pan.

Combine topping ingredients and sprinkle on batter.

Bake in a 350 degrees oven for 40 minutes.
